Sunday with a Side of Curry

Sundays.

By far my most favorite day of the week.

Sundays are filled with anticipations for the next week. Some legitimately discouraging and others full of glee.

They are filled with restful afternoons, lazy naps and refreshing worship.

And then some days, like today, are spent cooking and puttering around the kitchen.

Preparing something delightful and comforting to take you into the next week with ease.

Then what is coming out of my kitchen today you ask?

Curry everyone. Vegetable Curry. So much friggin' curry.

I swear, curry is something I could eat for days.

And considering how often I go out for Thai food, this is not just an exaggeration, but a relatively true statement.

I go out for Thai food a lot you ask? Yes, #smh I do.

Because life is busy, and I get tired. Because I'm human. And I don't feel like cooking.

I mean, doing the dishes.

So I eat Thai food. A lot of it.

And my wallet is feeling it.

Time to rein that habit back in and get my creative, kitchen juices flowing.

So standing in my kitchen this afternoon, I start preparing a deliciously comforting and satisfying curry. Loving adapted from one of my favorite cookbooks, Fresh from the Vegan Slow Cooker.

What makes this recipe so delightful is that it slow cooks for hours.

Filling my house with the tantalizing smells of fresh garlic, spicy ginger and warm garam masala.

I feel like such a legitimate cook and decently responsible adult when I make this curry.

The only down side is that I started it around 5:30pm. Which means it won't be ready until midnight.

Which means I'll be eating vegan mac and cheese for dinner. Sigh... #planning

But tomorrow. Tomorrow for breakfast, I will be going HAM on that curry. #veganham

Yes. Curry for breakfast.

What human (who obviously doesn't appreciate good curry) asks such a question?? <snort>

So, for the remainder of this perfect Sunday, I will be pouring over more cookbooks (cause that's how I roll), reading horror stories about online dating (these keep me quite content with being single) and catching up on SNL (because, SNL!).
